Stevens, playing across half-back, was instrumental in the 12.2 (74) to 9.11 (65) victory.
Vic Country team manager Jock Whiting said Stevens played well.
"He was in our best three," he said. "Very pleased with his work rate."
Whiting said Vic Country was impressive in the first three quarters.
It held a match-winning 46-point lead at three-quarter time before Metro rallied with six unanswered goals in the final term.
"They had a 30-player squad and had fresh legs and we had a couple of injuries which hit our rotations a bit in the last quarter," Whiting said. "But what they showed in the first three quarters was exceptional."
The championships were to be held in Queensland but they were cancelled because of COVID-19 travel restrictions.
Whiting said the AFL was keen to hold the championships and options were being explored for the other matches.
"We are just waiting on restrictions," he said.
"There is a possibility we could do a fly-in, fly out scenario with South Australia and Western Australia but we will just have to wait and see. We are keen to more because it's an important year for these boys."
